1/2 cup cider vinegar
1/2 cup water
2 tablespoons molasses
2 cups chopped cooked turkey meat
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1 cup deli coleslaw
4 burger buns, split horizontally and toasted
1. In a medium saucepan over high heat, combine vinegar, water and molasses, bring to a simmer; add turkey, red pepper flakes, black pepper, and salt.
2. Bring mixture to boil, reduce heat, cover and simmer 30 minutes. Uncover and simmer about 30 to 35 minutes or until liquid has evaporated.
3. To serve, spoon barbecue mixture over burger buns and top with coleslaw.
This is a unique way to use up Thanksgiving leftovers. It could also be made with leftover roast chicken.
