2 Red Delicious apples (about 6 ounces each), cored and thinly cut julienne
1/4 cup thinly sliced red onion
1/4 cup sour cream
1/4 cup mayonnaise
3 tablespoons chopped parsley
1 ounce crumbled blue cheese
1 tablespoon lemon juice
1/4 teaspoon sugar
1/8 teaspoon each salt and pepper, or to taste


1. In a large bowl, combine all ingredients; mix well. For optimum flavor, refrigerate 6 hours or overnight.

Apple Blue Cheese Slaw may be prepared with mustard vinaigrette instead of sour cream and mayonnaise. To prepare mustard vinaigrette, combine 3 tablespoons each olive oil and white wine vinegar, 1 teaspoon sugar and 3/4 teaspoon Dijon-style mustard; mix well. Makes about 1/3 cup.
