Ingredients

2 tablespoons butter
1 (21-ounce) can apple pie filling
1/2 cup dried cranberries
3 cups prepared granola
1 pint vanilla ice cream (optional)

Directions

1. Preheat toaster oven to 350 degrees F. In small heatproof cup, melt butter.
2. In a medium saucepan, combine the 1 can apple pie filling and 1/2 cup dried cranberries. Bring to a boil over medium heat, stirring constantly.
3. In a medium bowl, stir together granola and melted butter. Pat half the granola mixture into a 9 1/4 by 6 1/2 by 2-inch baking pan. Place the pan in a toaster oven and bake at 350 degrees F. until the layer begins to brown, about 5 minutes.
4. Spoon the hot pie filling over the toasted granola crust and top it with the remaining granola mixture. Return the pan to the toaster oven and toast until the topping browns, about 5 minutes. Serve warm, with vanilla ice cream, if desired.
You can experiment with other combinations of pie filling and dried fruit. Try peach with chopped dried apricots, cherry with dried sour cherries, or blueberry with dried blueberries.
