1 cup sliced celery
3/4 cup chopped onion
1 1/2 cups turkey or chicken broth
16 slices white bread, cubed and dried
2 tablespoons dried parsley
1 1/2 teaspoons poultry seasoning
1/2 teaspoon salt
2 egg whites, lightly beaten
1/4 cup chopped dried apricots


1. Preheat oven to 350 degrees F. In a small saucepan, over medium-high heat, combine celery, onions and turkey broth; bring to boil. Reduce heat to low, cover and simmer about 5 minutes or until vegetables are tender.
2. In a large bowl, combine celery/onion mixture, bread cubes, parsley, poultry seasoning, salt, egg whites and apricots. Spoon into lightly greased 2-quart casserole; cover. Bake about 30 to 40 minutes or until set.

This version of stuffing for your holiday turkey has less calories and fat than most.
