Ingredients

1 (4-ounce) package crispy Chinese noodles
1 cup unsalted dry-roasted peanut halves
1 cup coarsely chopped crystallized ginger
1 cup coarsely chopped dried apricots
1/2 cup shredded unsweetened coconut
3 tablespoons butter or margarine, melted
1 tablespoon sesame seeds

Directions

1. Preheat oven to 350 degrees F. In a large bowl, stir together the crispy noodles, peanuts, crystallized ginger, dried apricots, and coconut. Drizzle melted butter over; toss to coat. Sprinkle sesame seeds over mixture; toss again. Spread mixture out on an ungreased 15 x 10-inch jelly roll pan.
2. Bake about 10 to 15 minutes, stirring occasionally, or until coconut is golden and mixture is heated through. Turn mixture out onto paper towels to cool.

Serve at a party or as a lunch box or after school snack. You could also add other dried fruit, such as raisins or apples.
