4 cups diced avocado
2 cups grape or cherry tomatoes
2 cups peeled and chopped cucumber
1 cup diced red onion
1/4 cup chopped fresh cilantro
1/4 cup olive oil
2 tablespoons lime juice
2 teaspoons minced garlic
Salt and pepper to taste
In a large bowl, gently combine all ingredients. Stir just to combine.
If you want to make this salad ahead of time, add the avocado right before serving or it will turn brown.
