Ingredients

36 oysters in the shell
1/2 cup low-fat bacon chips
12 ounces low-fat mozzarella cheese, grated
4 jalapenos, sliced thin

Directions

1. Preheat oven to 350 degrees F. Wash oysters thoroughly. Shuck and place oysters in deep half shell removing any remaining particles of shell.
2. Arrange on baking sheet and top each with cheese, bacon chips and one slice of pepper. Bake for 10 minutes or until edges of oysters begin to curl.

You can also buy preshucked oysters, but make sure your fishmonger gives you the shells as well. Rinse the grit from the shells before replacing the oyster.
