1 pound Great Northern or other white beans
6 cups water
3/4 teaspoon salt
1/2 cup light molasses
1/4 cup ketchup
1/4 cup packed light brown sugar
4 slices bacon, halved
1. Pick through beans and discard any discolored ones or foreign material. Rinse beans thoroughly and bring to a boil with water to cover in a 5-quart saucepan. Cover, remove from heat and set aside 1 hour.
2. Drain, rinse, and return beans to saucepan with water and salt. Bring to a boil, cover and simmer 45 to 60 minutes or until tender.
3. Heat oven to 325 degrees F. Transfer beans to 2-quart baking dish. Stir in molasses, ketchup and brown sugar. Top with bacon and bake, uncovered, 1 hour or until bacon has browned. Serve from baking dish.
Baked beans are the perfect food for a winter weekend because they mind themselves in the oven while the cook does other things.
