4 boneless broiler-fryer chicken breasts, halved
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 (16-ounce) package sauerkraut, drained
4 slices Swiss cheese
1 1/4 cups thousand island salad dressing
1 tablespoon chopped parsley


Preheat oven to 325 degrees F. In greased baking pan, place chicken. Sprinkle with salt and pepper. Place sauerkraut over chicken; top with Swiss cheese. Pour dressing evenly over cheese. Cover with foil and bake in oven until fork can be inserted in chicken with ease, about 1 1/2 hours. To serve, sprinkle with chopped parsley.
For the thousand island dressing in the following recipe, you can either use store bought or can make the dressing by combining ketchup, mayonnaise and relish.
