2 tablespoons butter
3 shallots, chopped
2 pound lobster meat, cut in bite-size pieces
1 1/4 cups whipping cream
1/2 cup white wine
1/3 cup fish stock or clam juice
1 tablespoon cornstarch
2 cups sliced bananas, sliced
2 limes, peeled and sections removed from membrane
1 whole serrano pepper, chopped
Salt and pepper to taste


1. In a large skillet over medium heat, melt butter. Add shallots, cook for 1 minute, add lobster meat, cook until it just begins to turn white, about 2 minutes.
2. Meanwhile, in a medium bowl, combine cream, wine, fish stock and cornstarch; stir until no lumps remain. Add mixture to skillet, bring to a boil, stirring constantly. Add bananas, lime segments, serrano pepper, salt and pepper. Cook until lobster is cooked through, about 2 to 3 minutes.

With a whole serrano pepper, this dish will be quite spicy, but you can use less or omit it entirely if you want. Serve over rice or pasta.
