4 (8-ounce) baking potatoes, scrubbed
4 tablespoons (1/2 stick) butter, softened, or 1/2 cup sour cream
2 tablespoons snipped chives


1. Preheat oven to 425 degrees F. Pierce each potato once with the tip of a knife and place directly on oven rack.
2. Bake potatoes until tender, about 1 hour. If desired, oven temperature may be increased to 450 degrees F. after 45 minutes and potatoes will be done in slightly less time.
3. To serve, cut an X in each potato; squeeze sides of potato to open and top each with 1 tablespoon butter or 2 tablespoons sour cream. Serve hot.
Potatoes will bake at any temperature and can be added to whatever you are roasting. If the temperature is lower than noted here, they will just need to bake longer. If you prefer to avoid the traditional garnishes of sour cream or butter, try topping the potatoes with some roasted or saut»ed vegetables.
