8 ounces quinoa
1 (14 1/2-ounce) can chicken broth
1 cup water
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons butter, cut into bits


In a 2-quart saucepan, combine quinoa with broth and water. Bring to a boil; reduce heat. Simmer, covered, for 12 to 15 minutes, or until quinoa is tender and liquid is absorbed. Stir in salt and pepper. Dot top with butter and serve.

Quinoa cooks quickly and is high in protein. This basic preparation can be changed to suit your taste by adding onions, fresh herbs or spices.
