12 cups thinly sliced unpeeled Kirby cucumbers
2 medium onions, thinly sliced
3 cloves garlic, quartered lengthwise
2 teaspoons salt
5 cups sugar
3 cups cider vinegar
2 teaspoons mustard seed
1 teaspoon turmeric


1. Combine cucumbers, onions, garlic, and salt in a colander set over a bowl. Set aside 1 hour to drain. In large, heavy saucepan, combine sugar, vinegar, mustard seed and turmeric; bring to a boil, stirring constantly until sugar has dissolved.
2. Stir drained cucumber mixture into hot liquid. Divide among sterilized jars. Cover with sterilized lids and process in a boiling water bath for 10 minutes. Set aside to cool.

Paper-thin slices of fresh cucumber are canned in a sweet and sour marinade to make these yummy pickles.
