1/3 cup white-wine vinegar
3 tablespoons sugar
Salt and freshly ground black pepper to taste
1 small head Savoy cabbage, thinly sliced (about 4 cups)
2 cups shredded carrots
1 green bell pepper, chopped
3 green onions, thinly sliced


1. In large bowl, combine vinegar, sugar, and salt and black pepper to taste.
2. Add cabbage, carrots, green pepper, and green onions taste; toss until vegetables are thoroughly coated with dressing. Cover and chill the slaw at least an hour before serving.
This simple dressing is especially good for packing because it contains nothing that spoils quickly. The resulting fat-free salad is very refreshing.
