1 cup canned chicken broth
1/2 cup orange juice
2 tablespoons lime juice
2 tablespoons dark rum
2 tablespoons brown sugar
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon ground ginger
6 (4-ounce) boneless pork loin chops


1. In a self-sealing plastic bag combine chicken broth, orange juice, lime juice, dark rum, brown sugar, garlic, salt and ground ginger; stir to dissolve sugar salt and ginger. Add pork chops, seal bag, lay it in a shallow dish and refrigerate for 4-24 hours.
2. Prepare coals or preheat grill and place grill rack 4 to 6 inches from heat source. Remove chops from marinade and discard leftover marinade. Grill chops quickly over indirect heat in covered grill 5 to 6 minutes per side.

The marinade for these delicious chops is made with basic ingredients that you probably already have in your pantry. Serve the chops with leafy greens and rice or corn bread.
