6 medium sweet potatoes, peeled and sliced
1/2 cup brown sugar
4 tablespoons (1/2 stick) butter
1/2 teaspoon salt
1 cup miniature marshmallows (optional)


1. Heat oven to 375 degrees F. Grease a shallow 1 1/2-quart baking dish. In large saucepan, bring sweet potatoes and water to cover to a boil over high heat. Cover, reduce heat to low and cook until potatoes are just tender, 15 to 20 minutes. Drain, reserving 1/4 cup cooking liquid.
2. In baking dish, arrange one third of sweet potatoes, top with one third of brown sugar, butter and salt. Repeat twice. Bake 30 minutes or until bubbly and browned on top. If using marshmallows add before last 10 minutes baking time.
This traditional casserole may be topped with marshmallows or not as you wish. The decision will probably depend upon the presence of children in the family who are looking forward to the crisp golden topping they make.
