1 teaspoon minced garlic
1 pound deli turkey ham, cut into 1/2 inch cubes
1 (10-ounce) package frozen chopped spinach, thawed and drained
1 cup nonfat cottage cheese
2 tablespoons dried parsley flakes
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/3 cup water
1 (16-ounce) package no yolk egg noodles, cooked according to package directions
6 tablespoons grated Parmesan cheese


1. In a large nonstick skillet sprayed with cooking spray over medium heat, cook garlic until fragrant, about 30 seconds. Add turkey ham cubes, cook for about 2 minutes. Add spinach, separating with a wooden spoon to combine.
2. Reduce heat to medium; stir in cottage cheese, parsley flakes, Italian seasoning, salt and pepper. Add water and noodles, simmer until heated through, about 2 to 3 minutes. Serve immediately, topping each serving with a tablespoon of Parmesan cheese.

Serve as a quick and easy main dish, accompanied by a green salad or steamed broccoli.
