Chicken Burgers:
1 pound ground chicken breast
1/2 cup cooked wild or brown rice
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 teaspoons margarine
4 sandwich buns
parsley sprigs for garnish, optional
apple slices for garnish, optional
Apple Yogurt Sauce:
1/2 cup plain yogurt
1/4 cup chopped unpeeled apple
2 tablespoons chopped toasted pecans
1 tablespoon chopped parsley
1/2 teaspoon apple pie seasoning


1. Prepare Chicken Burgers: Place oven rack about 4 inches from the heat source and preheat broiler. In medium bowl, combine chicken, cooked rice, nutmeg, salt and pepper. Divide into 4 patties. Place on broiler pan and broil, about 5 minutes per side.
2. Prepare Apple Yogurt Sauce: In small bowl, combine yogurt, apple, pecans, parsley and apple pie seasoning.
3. Spread margarine lightly on inside of buns and toast in oven. Place chicken on toasted buns and spoon on Apple Yogurt Sauce. Garnish, if desired, with parsley sprigs and apple slices.

In order to prevent the apple slices for garnish from oxidizing and turning brown dip them in lemon juice after cutting.
