1 tablespoon olive oil
1/2 cup onion, chopped
1 green pepper, chopped
1 jalape�o cut in half
1 cup rice
1/4 cup white wine
1 teaspoon saffron
3 plum tomatoes, chopped
6 green olives
2 cups chicken stock

1. Bake one Chicken On A Can.
2. In a large stock pot, heat the olive oil. Add the onion, saut� for 2 minutes. Add the chopped pepper and the jalape�o pepper, saut� for 2 minutes. Add the rice and white. Stir to separate the grains of rice. Add saffron, tomatoes, olives and chicken stock and stir. Place the whole chicken on top of the rice mixture.
3. Cover the pot and cook on the grill for about 10 minutes or until the rice is cooked.
4. Serve

When this dish is finished, the chicken will be falling of the bones. George Hirsch likes to use his chicken on a can roasting technique but you can use a simple baked chicken.
