1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
8 tablespoons (1 stick) butter, at room temperature
3/4 cup packed light-brown sugar
1/2 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1/2 cup chopped nuts
1. Heat oven to 350 degrees F. Lightly grease 2 baking sheets. Stir together flour, baking soda and salt in a small bowl. 2. In medium bowl beat together butter and brown sugar until creamy and smooth. Beat in egg and vanilla. Stir in flour mixture until completely combined. Fold in chocolate chips and nuts.
3. Drop by level measuring tablespoonfuls, 2 inches apart, onto lightly greased baking sheets. Bake 8 to 12 minutes or until lightly browned at edges. Let cool slightly on baking sheets; transfer to wire rack to cool completely. Store in airtight containers.
The extra brown sugar in these chocolate chip cookies makes them especially butterscotchy. If you like them a bit soft in the center, watch them carefully while they are baking and pull them out of the oven just as soon as the edges begin to brown.
