2 1/2 cups milk, divided
2 (1-ounce) squares unsweetened chocolate, chopped
3 tablespoons cornstarch
1/2 cup sugar
2 teaspoons vanilla extract
1/4 teaspoon salt


1. In medium saucepan bring 2 cups milk to a boil over medium heat. Stir in chocolate.
2. Meanwhile, beat together remaining 1/2 cup milk and the cornstarch. Stir cornstarch mixture into chocolate mixture and cook, stirring, until pudding comes to a boil and has thickened. Stir in sugar, vanilla and salt. Cook 1 minute longer.
3. To serve, divide among 6 heatproof dishes and serve warm or cover dishes and refrigerate until ready to serve.
