6 ounces dried Christmas lima beans
2 cups peeled and cubed russet or sweet potatoes
1/2 cup chopped onion
4 cups chicken broth or water
1 tablespoon chopped fresh dill
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1. Place beans in a saucepan with water to cover. Bring to a boil; boil 2 minutes. Remove from heat; cover and let stand 1 hour.
2. Drain beans; in same pan, combine beans with potatoes, onion, and broth or water. Boil; reduce heat. Simmer, partially covered, about 45 to 60 minutes, or until beans are tender. Drain well; stir in dill, salt and pepper.

Christmas lima beans are a large white bean with reddish markings, and unlike most patterned beans, the color does not fade when cooked.
