1 whole chicken, cut into pieces
6 tablespoons soy sauce
2 tablespoons honey
1 tablespoon ground coriander seed
2 cloves garlic, crushed
2 teaspoons finely grated gingerroot
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper
Peanut Sauce:
4 tablespoons peanut butter
4 tablespoons soy sauce
2 tablespoons lemon juice
3 tablespoons brown sugar
1 1/2 teaspoons cayenne pepper
2 tablespoons honey


1. Prepare Chicken: Cut each breast crosswise into 2 pieces. Cut 2 parallel diagonal slits on meat side of each piece of breast, thighs and drumsticks, cutting almost all the way through to the bone.
2. Prepare Peanut Sauce: In large bowl, combine soy sauce, honey, coriander, garlic, gingerroot, turmeric and cayenne pepper. Add chicken, turning to coat. Refrigerate and marinate at least 45 minutes.
3. Meanwhile, prepare Peanut Sauce: In small bowl, combine peanut butter, soy sauce, lemon juice, brown sugar, cayenne pepper and honey. Stir to blend.
4. Preheat broiler. Remove chicken from marinade and place, skin side down, on oiled broiler pan. Adjust oven rack so chicken is about 6 inches from heat. Broil, turning once and basting with marinade, about 15 minutes or until golden brown and fork can be inserted in chicken with ease. Remove from oven and place on serving platter. Serve with Peanut Sauce.
