2 (10-ounce) packages frozen corn, thawed
2 cups milk
4 large eggs
4 tablespoons (1/2 stick) butter, melted and cooled
3 tablespoons flour
1/4 cup sugar
1/4 cup chopped scallions
1 1/4 teaspoons salt


1. Preheat oven to 350 degrees F. Butter 1 1/2 quart shallow baking dish.
2. In food processor fitted with metal blade, pulse 1 package corn until coarsely chopped. In small bowl, combine chopped corn with remaining package corn. In medium bowl, whisk together eggs, butter, flour, sugar, scallions and salt until well blended. Stir in corn.
3. Transfer mixture to buttered baking dish and bake on middle rack of oven 45 minutes, or until just set. Serve immediately from baking dish.
This is soothing dish, a cross between a soufflÈ and a pudding. It's best straight from the oven.
