� 2 lbs. farm-raised catfish
� 1/4 cup low fat milk
� 1 Tbsp. hot sauce
� pinch nutmeg
� 1 tsp. fresh thyme
� fresh ground black pepper to taste
� 1/4 cup all-purpose flour
� ? cup masa harina or corn meal
� 3 Tbsp. olive oil
� 1 ripe mango, sliced
� 2 Tbsp. balsamic vinegar
� 1/4 cup orange juice
� 1 Tbsp. cane or corn syrup


1. Soak catfish in milk, hot sauce, nutmeg, thyme and fresh ground black pepper for 1 hour in refrigerator.

2. Preheat saute pan with olive oil. Mix flour and masa harina or corn meal. Drain milk from fillets and cover fillets with the flour and masa harina mixture. Saute catfish until golden turning once.

3. In a separate pan, heat 2 Tbsp. balsamic vinegar, 1/4 cup orange juice, 2 Tbsp. cane or corn syrup and 1 cup of fresh sliced mango. Boil all ingredients for 5 minutes.

4. Place a serving of catfish atop 2 Tbsp. of mango sauce.

Catfish is a great fish for frying. George tops them with a sweet and sour mango sauce.
