1 pound bulk sausage
1 (15- or 16-ounce) can or pouch hominy, drained
1/4 teaspoon salt
1/8 teaspoon ground black pepper


1. Heat large heavy skillet over medium heat. Crumble sausage into skillet and fry until no longer pink. Pour off most of fat.
2. Add hominy and cook until sausage is cooked through and hominy is heated. Add salt and pepper and divide among 4 warm plates.

This quick and inexpensive dish is the ultimate country comfort food. It can be served for breakfast, lunch or supper.
