6 small cherry tomatoes
1 ounce goat cheese (or Philadelphia cheese)
2 green onions (or chives/scallions)
½ teaspoon pepper (or to taste)
½ teaspoon salt (or to taste)
oregano, basil, garlic (optional)
- Take a small tomato and cut the top in a cross-like fashion. With a small spoon, dig out the inside seeds and discard.
- Scoop a half-teaspoon (or until tomato is full) of goat cheese into the hollowed-out tomato. You may also use Philadelphia cheese if desired. In order to aplify and sharpen the taste, you can spice up the cheese with herbs such as basil, oregano and fresh graded garlic. Flavor with salt and pepper to taste.
- Pin a toothpick into the bottom of the tomato, and dress it with a green onion, just shorter in length than the toothpick. This will make it look like a flower stem.
- Pin the “flowers” into a vegetable, such as a zucchini. Cut the bottom of the zucchini to make a stable platform. Enjoy as a centerpiece and appetizer.
