1 large European cucumber, peeled, cut into 1/2-inch cubes
2 tablespoons chopped fresh dill
2 tablespoons extra virgin olive oil
1 large lemon (for 2 tablespoons juice)
Freshly ground black pepper
1/4 pound crumbled feta cheese


In salad bowl, combine cucumber, dill, olive oil, lemon juice and pepper to taste. Toss to combine. Add feta cheese and toss again gently. Taste; season with salt as necessary.
Feta cheese, made from goat's milk, can range from mildly to very salty, so we recommend that you toss and taste the salad before adding salt.
