� 4 10" Corn Tortillas
� 2 Duck breasts marinated (recipe below), grilled medium-rare and sliced thinly
� 2 Tbsp. prepared mustard
� 1/4 cup gruyere cheese, shredded
� 1 cup Granny smith apples, sliced very thinly
� 2 sliced jalapenos
� 1 Tbsp. fresh chopped cilantro


1. Preheat grill to low temperature. Cook tortillas on one side.
2. Lay tortillas flat. Spread mustard over top. Alternate duck slices with apple slices on tortillas. Top with cheese and sliced jalapenos.
3. Lay each prepared tortilla on grill and cover grill. Bake for 4-5 minutes or until hot & cheese melts and serve with cilantro and your favorite salsa.

� 1/3 cup orange juice
� 2 Tbsp. olive oil
� 3 cloves caramelized garlic, pureed
� 1 Tbsp. prepared mustard
� 1 tsp. chopped fresh cilantro
� Freshly ground black pepper and salt to taste

Combine ingredients in a medium size bowl. Add duck breasts and cover with plastic wrap. Allow to marinate for at least two hours or overnight in the refrigerator.

George Hirsch uses duck for this recipe but you can use leftover chicken or turkey.
