1 cup cooked, flaked white fish, such as cod, grouper or red snapper
1/2 cup drained sauerkraut
1/4 cup chopped dill pickles
1/4 cup mayonnaise
1 tablespoon horseradish mustard
8 slices rye bread
4 slices Swiss cheese
2 tablespoons butter


1. In a medium bowl, combine fish, sauerkraut, pickles, mayonnaise and mustard; mix very gently until just combined.
2. Spread 1/4 of mixture on each of 4 slices of bread; cover each with a cheese slice, top with remaining bread.
3. In a large skillet or on a griddle, melt butter over medium heat. Place sandwiches in skillet, cook on both sides until golden brown, about 2 minutes per side.

Because it is so salty, rinse and drain the sauerkraut thoroughly before mixing with the other ingredients.
