Vegetable oil for frying
2 pounds alligator meat, cut into bite-sized pieces
1/4 teaspoon garlic powder
Salt and pepper to taste
3 eggs
3/4 cup milk
3/4 cup all-purpose flour


1. In a large saucepan with deep sides, heat 2 inches of oil to 350 degrees F. Season alligator with garlic powder, salt and pepper.
2. In a medium bowl, whisk together eggs and milk. Place flour in a pie plate. Dip alligator in egg mixture, then dredge in flour. Deep fry in several batches, turning occasionaly, until golden brown, about 2 to 3 minutes per batch. Drain on paper towels, serve immediately.

Serve with a honey mustard dipping sauce for an easy but unusual appetizer. The alligator should come pretenderized, if not, pound pieces with a meat mallet to a 1/2-inch-thickness before proceeding.
