Vegetable oil for frying
1/2 cup all-purpose flour
1/2 teaspoon salt
1 large egg
1/4 teaspoon hot sauce
1 cup cracker crumbs
24 shucked oysters, drained
Lemon wedges


1. Heat 3 inches vegetable oil in deep fryer or medium saucepan to 375 degrees F.
2. Meanwhile, in small bowl combine flour and salt. Beat egg and hot sauce in another small bowl and spread out cracker crumbs on a plate. Coat oysters in flour mixture, then in egg and finally in cracker crumbs.
3. Place as many oysters in oil as there is room for them without touching each other. Fry until golden on all sides, 4 to 6 minutes.
4. Drain oysters on paper towels and keep warm until all have been fried. Serve immediately with lemon wedges.
These are the star of the meal no matter what you serve them with. They can be accompanied by a slice of country ham, served on crackers or bread, or used to top an elegant salad.
