2 1/2 pounds fresh white mushrooms
2 cups distilled white vinegar
6 cloves garlic
1/2 teaspoon salt
1 cup olive oil


In a large saucepan, combine mushrooms, vinegar, garlic and salt. Bring to a boil, remove from heat and let cool in the liquid. Add olive oil. Store in the refrigerator.
Feel free to add some dried herbs and spices to this basic recipe. One or two teaspoons of oregano, dill or tarragon would work well.
