2 cups olive oil
1 head garlic, peeled and separated into cloves


In a small saucepan, bring oil to a simmer. Add garlic cloves, simmer gently for 30 minutes, until garlic cloves are completely cooked and very soft. Strain oil, reserving garlic and oil separately.

Use the garlic in Nick Stellino's garlic mashed potatoes (see link) or other recipes calling for roasted garlic. The flavored oil can be used for sauteing or in salad dressings. The garlic oil should be refrigerated if you’re not using it right away.
