4 amberjack fillets (about 1 1/2 pounds)
1 cup honey
2 teaspoons ground ginger
1 red bell pepper, seeded and cut into thick strips
1 yellow bell pepper, seeded and cut into thick strips
Salt and pepper to taste


1. Prepare outdoor grill, placing grill rack 5 inches from heat source. Season fillets with salt and pepper. In a small bowl, combine honey and ginger; brush half of honey mixture fillets to coat fish evenly.
2. Place fish on oiled grill over, basting frequently with honey mixture; grill until cooked through, about 3 minutes per side. Coat bell peppers with remaining honey mixture and grill with fish until tender, turn peppers often to avoid burning.

Amberjack is a strong flavored fish available year-round from Florida. Its flavor holds up well to grilling, broiling and smoking. If unavailable, substitute pompano or yellowtail.
