1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) butter or margarine
1 slightly beaten egg
1/3 cup milk
3 or 4 Golden Delicious apples
1/2 cup packed light-brown sugar
1/2 teaspoon ground cinnamon
1-1/2 cups shredded coconut
1/2 cup sugar
1 egg, beaten
1/4 cup whipping cream
1/8 teaspoon salt


1. For Pastry: Sift together flour, baking powder and salt. Cut in butter or margarine until mixture is crumbly. Combine egg and milk. Add to dry; blend with fork. On lightly floured surface, knead gently until smooth. Roll out dough and line a 15 x 10 x 3/4-inch baking pan.
2. Pare apples if desired; core and slice thinly to equal 4 cups. Arrange in overlapping rows on the pastry-lined pan.
3. Combine brown sugar and cinnamon; sprinkle over apples. Bake at 425 degrees F. 20 minutes. In a medium bowl, combine coconut, sugar, egg, cream and salt and spread over top. Reduce heat to 350 degrees F.; bake 20 minutes longer. Cool and cut into 2 1/2 x 1 1/2-inch bars.

These are some seriously decadent bars with a tropical twist; you can make the dough a day or two ahead of time and refrigerate.
