Ingredients

1 12-inch prebaked pizza crust
2 tablespoons olive oil
1 pound fresh white mushrooms, sliced (about 6 cups)
4 cloves garlic, sliced
1/2 cup grated Parmesan cheese, divided
2 ounces thinly sliced prosciutto di Parma, cut in pieces
1/2 cup sliced roasted red pepper
1 sliced green onion
1/2 teaspoon ground black pepper
1/2 teaspoon Italian seasoning

Directions

1. Prepare outdoor grill, placing grill rack 5 inches from heat source, or preheat broiler until hot. Place pizza crust on grill rack or broiler pan with the top side facing the heat; grill or broil until toasted, about 5 minutes; remove.
2. In a large skillet, over medium-high heat, heat olive oil. Add mushrooms and garlic; cook and stir until tender, about 7 minutes. Sprinkle 1/4 cup of the Parmesan evenly over pizza crust. Top with mushrooms; scatter prosciutto and roasted peppers over mushrooms. Sprinkle with green onion, black pepper, Italian seasoning and remaining 1/4 cup of cheese. Grill or broil until hot, about 5 minutes. Cut into wedges. Serve immediately.
If you can't get prosciutto, substitute sliced pepperoni or strips of salami.
