12 medium soft-shell crabs, cleaned
3/4 cup chopped fresh parsley
1/4 cup vegetable oil
1 teaspoon lemon juice
1/4 teaspoon nutmeg
1/4 teaspoon soy sauce
1/8 teaspoon hot pepper sauce
lemon wedges


1. Prepare outdoor grill, placing grill rack 5 inches from heat source. Rinse crabs under cold running water. In a small saucepan, combine parsley, oil, lemon juice, nutmeg, soy sauce and hot pepper sauce; simmer to blend flavors, about 5 minute.
2. Place crabs in oiled wire grill baskets. Grill, basting with sauce, until cooked through, about 5 minutes per side. Serve with lemon wedges.

Be careful when cookng soft shell crabs, as they may spurt hot juices as they cook.
