2 beefsteak tomatoes
1 tablespoon olive oil
1 clove caramelized garlic � see link
1 tablespoon fresh cilantro, chopped
Remove the top core of the tomatoes and slice them in half - crosswise. Drizzle them with olive oil. Rub the cut sides of the tomatoes with caramelized garlic. Sprinkle with chopped cilantro and grind some black pepper on top.
Place the tomatoes cut side up on the upper rack of the grill. Let cook until they become soft on the sides. Cooking time will vary depending on the heat level of the grill.
George Hirsch uses cilantro for this recipe but you can use any fresh herb. If you don�t have time to roast garlic, rub the tomatoes with fresh garlic.
