1 pound coarsely ground venison
1/4 cup finely chopped green bell pepper
2 tablespoons chopped parsley
1 tablespoon chopped garlic
2 teaspoons prepared horseradish
1 teaspoon Worcestershire sauce
1/2 teaspoon seasoning salt
1/2 teaspoon hot pepper sauce
1/8 teaspoon cayenne pepper
2 tablespoons butter
1 large onion, sliced thin
1/4 pound mushrooms, sliced thin
1/4 pound thinly sliced gouda cheese
4 large hamburger buns


1. Prepare outdoor grill, placing grill rack 5 inches from heat source. In a large bowl, combine venison, bell pepper, parsley, garlic, horseradish, Worcestershire, seasoning salt, hot pepper sauce and cayenne; mix until just combined.
2. Meanwhile, in a medium skillet over medium heat, melt butter. Add onion and mushrooms, cook until browned, about 12 minutes, keep warm.
3. Place venison patties on grill rack, grill about 3 to 4 minutes per side for medium rare to medium. Top with cheese and onions and mushrooms, place on buns and serve.

Do not overmix the meat mixture or the burgers will be tough. These burgers could also be cooked in a grillpan or cast iron skillet.
