Ingredients3-4 ounces top quality bittersweet chocolate
1 cup water
2-3 tablespoons unsweetened whipped cream
Directions1. In the top of the double boiler over boiling water, pour in the water and add the chocolate. When the chocolate is melted, transfer the mixture to a blender and whip for 30 seconds. Alternatively, use an immersion blender.
2. Return the mixture to the double boiler and heat to the desired temperature. Pour the hot chocolate into a large cup and top with the whipped cream.
This is the Sicilian version of hot chocolate and it contains no milk. It relies, Faith Willinger says, on first-rate bittersweet chocolate and a generous dollop of whipped cream for its success.
