3 boneless pork loin chops (about 1 pound)
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons butter
1/2 cup red wine
1/4 cup honey
1/4 cup water
2 guavas, peeled, seeded, sliced thin


1. Season pork chops with thyme, salt and pepper. In a large skillet over medium-high heat, melt butter; cook pork chops until browned, about 2 to 3 minutes per side.
2. To skillet with pork, add wine, honey, water and sliced guavas. Cover and simmer until pork is tender, about 25 minutes.

Serve the pork over rice or couscous. When buying guavas, choose soft, yellow ones that are free of any bruises. You can also ripen guavas at home in a paper bag.
