Ingredients

1 pound boiled ham or scraps from holiday baked ham
2 hard-cooked eggs, shells removed
3 tablespoons mayonnaise or sour cream
3 tablespoons milk
3 tablespoons chopped, seeded, oil-cured ripe olives
1 tablespoon finely-chopped green onion
1 tablespoon finely-chopped fresh parsley
Salt and pepper
Boston lettuce leaves

Directions

1. Coarsely chop ham and eggs. In small bowl, with fork, combine ham, eggs, mayonnaise, milk, olives, green onion, and parsley. Add salt and pepper to taste.
2. Place lettuce leaves on chilled salad plates. Divide ham salad among plates. Serve or cover and refrigerate until ready to serve.
