2 1/2 cups milk
2 large eggs
1 teaspoon cornstarch
1/2 cup sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
1 cup heavy cream


1. In medium saucepan bring 2 cups milk to a boil over medium heat.
2. Meanwhile, beat eggs until light; beat in remaining 1/2 cup milk and the cornstarch. Stir egg mixture into hot milk and cook, stirring, until custard just comes to a boil and has thickened. Stir in sugar, vanilla and salt. Cook 1 minute longer. Set aside to cool to room temperature; refrigerate until well chilled.
3. When custard mixture has chilled, beat cream until soft peaks form. Fold custard mixture into cream and freeze in electric ice cream freezer following manufacturerís directions. Pack in freezer container and allow to ripen for several hours before serving.

Ice cream improves in flavor and texture if allowed to ripen in the freezer for an hour or so after it is made.
