2 1/2 pounds chicken wings
3 cloves garlic, crushed
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon parsley flakes
1/4 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup balsamic vinegar
radicchio leaves for garnish, optional
curly parsley for garnish, optional


Preheat oven to 350 degrees F. Cut wings at each joint; discard tips. Place other joints in shallow baking pan; sprinkle with garlic, Parmesan, oil, parsley flakes, oregano, salt and pepper. Place in oven for about 45 minutes. Remove from oven, pour vinegar over chicken and place under broiler about 4 minutes on each side. Garnish serving platter, if desired, with radicchio and parsley.
Parmesan cheese is made from skimmed or part-skimmed cow's milk. The best quality Parmesan cheese is produced in Italy and is called Parmigiano-Reggiano. By law, this cheese is aged longer than other Parmesan cheese.
