1 (7.6-ounce) package Mexican-flavored rice mix
1 pound ground turkey
1 (1 1/4-ounce) package taco seasoning mix
1 1/2 cups prepared guacamole
1 cup lowfat sour cream
1 cup salsa
1 cup shredded reduced-fat Cheddar cheese
1 (2 1/2-ounce) can sliced black olives
1/2 cup sliced green onions
1 medium tomato, chopped


1. Prepare rice according to package directions. In large skillet, over medium-high heat, cook turkey about 5 to 6 minutes or until no longer pink. Stir in taco seasoning, cook until fragrant, about 1 minute.
2. In an 11-inch glass pie plate, form layers starting with prepared rice, then turkey mixture and guacamole. Top with sour cream, salsa, Cheddar, olives, green onions and tomato.
