1 (8-ounce) package macaroni
4 tablespoons (1/2 stick) butter
1/4 cup unsifted all-purpose flour
1 teaspoon dried mustard
2 1/2 cups milk
2 cups grated Cheddar cheese
1 cup fresh whole-wheat or white bread crumbs


1. Cook macaroni in boiling salted water according to package directions. Drain well.
2. Meanwhile, melt shortening in a heavy saucepan over low heat. Stir in flour, mustard and 1/2 to 3/4 teaspoon salt until smooth. Very gradually stir in milk; cook over low heat, stirring constantly, until sauce has thickened. Fold in 1/2 cup cheese.
3. Preheat oven to 350 degrees F. Generously grease a 9-inch (6-cup) baking dish. Place 1/3 of macaroni in dish in an even layer. Top with 1/2 cup cheese sauce and 1/4 cup cheese; repeat once. Top with remaining macaroni, sauce and cheese. Combine crumbs and butter. Sprinkle evenly over top.
4. Place on rimmed baking sheet and bake 40 to 45 minutes or until browned and bubbly.

This satisfying casserole can either be a hearty side dish or a meatless main. A perennial favorite with both children and adults, it appeared on American tables from coast to coast before pasta became a household word.
