Ingredients

1 tablespoon melted butter
2 tablespoons light brown sugar
1 large mango, peeled and sliced 1/2 inch thick
4 tablespoons (1/2 stick) butter, softened
1/2 cup sugar
1 large egg
1 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup vanilla nonfat yogurt
1 teaspoon grated lime peel

Directions

1. Preheat oven to 350 degrees F. Brush a 9-inch cake pan with melted butter, sprinkle with brown sugar. Lay mango slices in prepared pan in a circular pattern.
2. Using an electric mixer, cream butter and sugar; add egg, mixing to combine. Sift together flour, salt and baking soda.. Alternately add dry ingredients and yogurt to butter mixture. Stir in lime peel.
3. Bake for about 25 minutes or until cake begins to pull away from the sides of the pan. Remove from oven and invert on cooling rack to unmold.

Use ripe mangoes for this recipe. A mango is ripe when it yields to gentle pressure under your finger.
