3 pounds fresh white whole mushrooms
3/4 cup distilled white vinegar
1/2 teaspoon salt
6 tablespoons canola oil
2 teaspoons chopped fresh parsley
3/4 teaspoon black pepper
2 cloves garlic, crushed
1 onion, finely chopped


1. In a large saucepan, combine mushrooms, vinegar and salt. Bring to a boil and simmer for about 5 minutes. Drain.
2. In a medium bowl, combine remaining ingredients. Add mushrooms. Refrigerate.
For the best flavor, remove the mushrooms from the refrigerator about an hour before serving.
