1 tablespoon olive oil
8 ounces sweet Italian sausage, removed from casing
1 pound fresh white mushrooms, sliced (about 5 cups)
1 cup cherry tomatoes, quartered
1 10 to 12-inch prebaked pizza shell
1/2 cup prepared pesto
2 cups shredded mozzarella cheese, divided


1. Preheat oven to 450 degrees F. In a large skillet, heat oil until hot, add sausage. Cook until browned, stirring constantly to break up sausage, about 5 minutes.
2. Add mushrooms; cook, stirring occasionally, until tender, about 6 minutes. Add tomatoes; cook and stir, until heated through, about 1 minute.
3. On a 12-inch pizza pan, place shell; spread pesto over shell; sprinkle with half of the mozzarella. Using a slotted spoon, spread mushroom mixture and sausage over cheese; sprinkle with remaining cheese. Bake until hot and cheese is melted and bubbly, about 10 minutes.
You can omit the sausage to make this pizza a lighter, vegetarian main dish.
